I have all of Ruth Conrad Bateman's cookbooks including some small brochures done in the early '60s. The recipes are so well-tested that everything comes out perfectly. The Zucchini & Carrot Cookbook has a recipe for Mexican Stew that I love, and for two taverna style Greek dishes that are just fabulous. Her carrot souffle is excellent and the the Tropical Carrot cake is always a winner. This is a fun book to cook from and just amazing what can be done with these two simple vegetables. I don't know who this woman was -- I'm assuming she's passed away -- but her work is impeccable and I haven't tried a recipe from any of her books that wasn't easy to follow and turned out great. She wrote the I Love To Cook Book, Serve it Cold, and one on buffets. The pies in the I Love To Cook Book are great -- Lemon - Raisin - Pumpkin and Chocolate -- yummy.
