Hale, Hearty and Wholesome

Not too long ago, salad dressing was something pre-made in a bottle, full of chemicals, and glopped onto a salad in the hopes it would make the greens less bitter. These are happier days, though, and the doyenne of California salads, Michele Jordan, has pointed us in some interesting new directions. Here's where we learn Green Goddess dressing "by hand," the secret to balsamic vinegar at home, the judicious choice of olive oil, various marinades of varying complexity, even new ways to dress up slaw, tabbouleh and farro. Since the directions are patient (and not too difficult) and the color photography more than pretty, VINAIGRETTES AND OTHER DRESSINGS would make a nice present, too. Ms. Jordan, thanks to you and California for noticeably improving the American diet!
