My wife and I are vegetarian. We mostly cook indian vegetarian food but being in US we get a chance to try different flavors and cuisine of vegetarian food in restaurant, which always kept me wondering how did they make it. This books give the answer to that question. Pros: Healthy vegetarian cooking and benefits listed for all dishes. It explains the ingredients of different vegetarian cuisine like swiss, italian, greek, mexican, thai, japanese, chinese and more.Also it explains, how it can be made. (Personally this has been very helpful to me, as mentioned I was only familiar with indian cuisine but this book helps understand different cuisine ingredients) Mouth relishing photos of the dishes Cooking instruction are very simple to follow (I rate my self as beginners in cooking and I cook from this book) Con: Just one. Most of the receipe requires atleast an hour of cooking. But if you read cooking instruction carefully and become creative then you can cut cooking time in half. For e.g. whenever it say boil or simmer for 30 - 45 mins, I replace it with 15 mins of pressure cook. Taste's pretty much the same. I definitely recommend it to everybody especially those who are into ethnic food.

I love this cookbook. I'm not a vegetarian, but I love creative recipes involving vegetables. I have a hard time coming up with vegetarian recipes on my own, so this book fills in that gap for me. It has beautiful full-color pictures of just about everything. Even recipes that I have a hard time picturing or enjoying in my mind come to life in this book and make me want to cook them myself.

I have been a vegetarian for over 10 years now. I have several giant cookbooks with 1000's of recipes. However, I turn to this cookbook again and again and again. I never grow tired of the recipes and often find new things I haven't tried, even though I've owned it for 5 or more years. There are simple recipes for lite meals up to elaborate items for holiday dinners. Something for everyone. Anyone who is a vegetarian NEEDS to own this book!
