I've had this book for probably 20 years--since before I became a vegetarian--and I've used it often since day one. The recipes are excellent but not fussy. Two dishes are among my standbys for potlucks--the Confetti Corn Salad (better sans cheese, BTW), and the Caponata--and I always get asked for the recipes. You absolutely can't go wrong with this book.
Vegetarian Cooking at the Academy

One of my favorite cookbooks, and I have lots. The recipes are excellent -- gourmet, but do-able. The book is organized by season and has some menus. It is also a great kitchen reference with great information about vegearian ingredients.
