Traditional Eastern European Jewish Dairy Cuisine

In my youth my family and I ate at Ratner's. Ratner's was a kosher restaurant that specialized in meatless dishes. The restaurant disappeared long ago from the lower East side of NYC. This cookbook is what we have left of that wonderful tradition. I refer to this book often. Those who keep strict Kosher practice, do not eat meat products and milk products at the same meal. So two different Kosher cuisines have evolved based on meals with meat (Fleishig) and meals with fish and dairy (Milchig). Very often two different versions of the same dish evolved, i.e. pea soup, chopped liver, etc. In addition to Jewish cooks looking to produce traditional favorites, this book would be of interest to vegetarians, particularly those who consume eggs, milk and cheese. One of the highlights of a meal at Ratner's was a basket of their own superb fresh baked breads and rolls. This book contains most of those recipes.
