This book is a great introduction to preparing, cooking, and preserving all kinds of veggies. I heavily relied on this while I was a thrifty vegan college student, and it's still a go-to as I'm entering my omnivorous 30's. Recipes are extremely concise and easy to follow. You can learn the basics about how to work with all conventional US vegetables, whether you want to freeze for later, saute, or make a quickbread. It's also not a strictly vegetarian cookbook - they have meat-inclusive recipes for borscht and so on.
One note - The book does include a Christian message in the intro, and Bible verse tucked into each veggie chapter: something to know before buying as a gift, perhaps.
