The Omelette Book recommended by Julia Childs

The Omelette Book was referred to by Julia Child in a recent public TV rebroadcast of her most popular shows. It is a comprehensive presentation of one of the most popular dishes for breakfast. All types, all methods. It along with Julia's show on an omelet has changed my manner with which I prepare my morning omelet. Often older things present the best manner to produce modern experiences.

A fine book, but not for novices

This book is mainly a (large) collection of omelette recipes. I was hoping it would go into detail about exactly how to make an omelette, what kind of equipment to use. But it only has 2 pages that briefly touch on how to make one.Bottom line is, if you're still trying to learn how to make the perfect omelette, look elsewhere.
