This is a must-have cookbook for all who like (or would like) to eat more vegetables, especially those who may be newly switching over to a Vegetarian diet (such is in a "CHIP"/"Dr. Dean Ornish"-type program). Many of the 175 recipies are Vegan friendly while some require some Ovo/Lacto-Vegetarian items (e.g. cheeses, eggs, etc.). The 96 page, roughly eleven inches squared sized book has recipies for soups, appetizers, main courses, pizzas, salads/dressings, fondues, snacks, side dishes, and deserts. Each recipe has a nice color photograph of a "serving suggestion"--sometimes also even additional photos showing a specific preperation method. The easy-to-follow recipies include things one could consider "ordinary" (such as a "4 cheese pizza," "pesto sauce," or Greek "pita sandwiches") to the "less than ordinary" (such as several types of fondues, dips such as guacamole, tabbouleh, and several dishes that could be considered "exotic" by midwestern US standards...). I only wish that I had found this book sooner!!
