This book was published in 2004. I do not know what info was out at that time about refined/processed oils, but this book is advising the reader to substitute Whole Foods such as milk, butter, cheese, etc. to canola, soybean, corn, safflower, etc. oils and low/non fat foods which are usually supplemented with higher amounts of salt and sugar to enhance flavor. While you MAY lower your cholesterol, you may also get cancer, diabetes, GI issues, inflammation and other problems that you can easily read about on the internet and in newer published books. I won’t be using this cookbook and will try to recycle it.

This is a very nice cook book. It is a large size with hard cover. There aren't any pictures, but directions are easy to follow and they give you tips, such as canned broth is higher in sodium and to read labels when selecting flour tortillas, not to buy those with lard or a saturated oil. It gives you serving suggestions (what to serve with entry) and lists nutritional information per serving. Good value. I would recommend. Although I haven't tested any recipes yet, they do look good and easy to prepare. I am trying the chicken enchiladas recipe this week.

I'm so glad I ordered this book. My husband recently underwent coronary bypass surgery at 44 yrs old. In the past I've been somewhat careful of diet and exercise...until now. I was in desperate need of good information and recipes that taste good and found both in this book. I very much appreciated that I could look at all the reviews and get a peek at the content. This book is for a Christmas gift for my younger brother who had to have a triple bypass in July 2008. His cardiologist suggested this group of books for him to aid him in continuing to live a heart healthy life. He thinks some other family member will send him this (we have a draw for each others names as we have a large family) so it will be a surprise to him on Christmas morning. And I was so glad to be able to get this book and the companion book for him so he can live a longer, healthier life.
