I bought this because it listed James Beard as the author but there is no mention of him in the book at all. The book seems pretty good though and will try some of the recipes.

I have been baking for many years, but until recently, I never tried baking in clay. I was somewhat intimidated by the prospect because I know that clay can be a bit tricky to work with. However, this book dispelled all fears of that. This book introduces the reader to the clay pot, the various shapes and functions of avaiable pots. Information is included on how to prepare the pot for whatever recipe you might be using. Of course, the French bread recipe is terrific and not that difficult. But I was quite pleasantly wurprised by the stuffed peppers and the rack of lamb, too. SO if you want to try out baking in clay - whether it's bread or veggies or meat (even seafood), this book is a great place to start and I recommend it highly.
