Why this book is out of print is beyond me. I bought a copy in 1975 and it remains my bible.
A little hint: if the author has a personal preface before the recipe, it's one of the best recipes.

I received this as a wedding gift in 1982. What a gem. It is terrific; I cannot imagine why it is no longer in print. The recipes are great and easy to follow, and the information about the regional cuisines is fantastic. One of my favorite (of many) cookbooks, and definitely my favorite Asian one. My only quibble is that the recipes sometimes carry over so you have to turn the page; I just make a copy, though.

I purchased this book 20 or so years ago and have lived by only a few of its fabulous dishes--shrimp, eggplant, cabbage. Worth it for that alone. It is authentic and essential. But don't buy up all the copies leaving no future gifts for me. I keep wearing it out.
