Essential reading to up your cooking game

We first watched Chef Bill on The Great Courses and fell in love with his wit and techniques - he taught us that cooking well does not have to be hard. I cannot recommend this textbook (OR watching the classes) enough. The books are well-written, incredibly informative, have great photos, and the author is a treat. Check out all of his books. DO IT!
