Although I confess that I have only read about half of theis book, skimming the other half, I am in love with it. The author's tone is personable, British, full of astute observation and wry commentary. He essentially walks the reader through the different variaties of W & C being produced (sadly, less and less) by individuals in both America and Europe. He explains in great detail the essential steps in making everything from Gruyere to Leicester and Mead to Merlot. If you are curious about this dying art, hallowed in antiquity and industrialized today, I should find no better place to delve in. Please, buy this book.
