this is a very good book on the history, recipe and use of grains. this book would be great for a colinary class. the recipes are great, tried a few. but what i was looking for was the information on growing, dieseases, pests and storing of grains. this book is detailed on the parts of the grain used, cooking, minerals and vitamins of the grain
