For a cookbook largely devoted to one ingredient, this is a pretty good book. There is an interesting little section in the front describing the appearance, flavor, and availability of various types of apples. There are some traditional apple recipes, like "Waldorf Salad" and "Baked Chicken with Apples". There are also unique dishes like "Trout with Apples" and "Turkey Kabobs with Apple". The recipes for sweets are outstanding. The "Apple Strudel" is wonderful; the "Toffee Apple Cheesecake" a sweet summer treat.
