purchased several new years ago as gifts. didn't get one for myself. Glad I found this copy. it's a very well written clearly illustrated. book. a must have for any kitchen.

The best parts of this book are the many pictures and clear step by step instructions from some of the best in the business. Go to book for both basic and advanced techniques. Expensive, but worth it.
