I am a 5th generation Texan, a guy that not only loves to eat but cook. Texas The Beautiful, 1st edition 1989 by Portland House, is by far my favorite cookbook. It is more than a cookbook. It is a large book (10X14 inches) with over 60 beautifully photographed color illustrations, of food and Texas landscape. Many of the illustrations are full or double paged. Many of the recipes are accompanied by photographs so well done that it appears one could reach in an take a bite. The quality of the photography makes this a coffee table book, however; be prepared, the guest that takes a look, will want to stay for dinner. The 400 recipes range all over the great state of Texas. East Texas Cajun/Creole/Deep South, North Texas Cowboy/Pioneer, South & West Texas Tex-mex/Barbecue/Indian. While this book appears a little pricey,it is worth the price, and you want be disappointed.

I love this book, but was originally confused because there are apparently a couple of Texas The Beautiful cookbooks. This is the original one, published by Portland House with cows on the cover, Texas-sized (really big) with some illustrations that must be actually life-size. Apparently, this book isn't part of a "The Beautiful" series. This one isn't published by News America. It has as contributors the food editors of the Houston Chronicle and the San Antonio Express-News.
