My husband and I are fledgling gourmet cooks. We haven't had any problems preparing wonderful entrees, but found ourselves floundering when it came to salad - usually relying on "salad in a bag" & trying to jazz that up somehow. Along comes this wonderful book with only salads - lots of salads. Every page opened new horizons for us. The beauty of this book is Mr. Schwartz isn't asking you to find something only grown in Tibet, he explains exactly how to prepare the dish & often suggests substitutes if you can't find or don't care for different ingredients. After reading his book, I feel I can go to to the grocery store and pick up a myriad of things and be confident that I can put together an interesting and tasty salad - either for a first course or main entree. This book is a must for anyone who is interested in preparing and presenting a completely beautiful and delectible meal start to finish - gourmet or not!
