An "Almost Vegan" cookbook

If it were 100% vegan I'd certainly give it five stars, but some of the recipes call for ingredients such as oil or soy beans. I replace the soy beans with white beans... we don't like GMO 'Frankenfood.' ☺ So the rating reflects my prejudice, not entirely the content of the book. That being said, this is one of my 'go to' cookbooks. The format is very readable, and all of the recipes are in a one-page format; I can place it in my plastic stand and read it without having to stop what I'm doing, wash up, and turn the page. The recipes don't call for exotic ingredients-- any accomplished cook should have the ingredients called for readily available, and a vegan cook certainly will-- and directions are simple and easy to follow. Vegan or not, this is a handy book with recipes that will delight the palate.
