This is a beautiful book with many great ideas for creative Mexican cooking. There is not a typical enchilada or burrito recipe in the book, and the photography is wonderful.

This is a magical book. Mexican food is vast, bold, spicy, festive and over all, plain delicious. Richard Sandoval brings a new element to this mix, Complexity. Mr. Sandoval polishes a Diamond in the rough. The genius of this chef lies in the fact that he gives layers of flavor to ingredients that are known to be overpowering. Latin American food in general, is very direct and bold. It is an incredible achievement to tame and refine these ingredients, to create dishes that reveal contrast and balance, while preserving the essence of Mexican folklore. The Mexico of these days is vibrant and cosmopolitan but has deep roots of tradition. Mr. Sandoval?s cuisine is a great representation of this era. If you are looking for classical Mexican cuisine buy something else, but if you want to experience one of the most interesting and exciting cuisine of the last decade, this is your book.Who would have thought that Mexican cuisine would reach this level of sophistication? After you read this book, you will never think of Mexico in the same way.
