Simple and USEFUL!

I got this book at the DOLLAR STORE and so wan't expecting much out of it, but I was wrong, it's a TERRIFIC vegetarian cookbook. Recipes have a manageable number of ingredients and there's nothing strange or hard to obtain. If you have to cook for someone with an intense hatred of tomatoes (like my husband) this book has many good selections that are tomato-less. There are also a good number of eggplant recipes, for those of you who grow them and have bushels to use up in creative ways. Vegetarians, beware, apparently the author believes that a meatless meal can contain chicken stock. This need not be a big problem-- I think vegetable stock could be substituted most of the time. There aren't too many that call for it. Here are some sample dishes to give you an idea of the variety:Fried Zucchini with Cucumber-Yogurt Sauce; Greek Stuffed Baked Potatoes with Tomatoes, Olives, and Cheese; Red Onion and Grilled Red Pepper Soup; Black Bean, Corn, and Leek Frittata; Spinach with Cheddar Cheese Sauce and Crunchy Topping, Polenta Cubes with Goat Cheese Vegetable Sauce; Rotini with Three-Onion and Garlic Sauce; Hazelnut Yam Wonton.There are recipes of Asian, Indian, Greek, American, and Italian influences, among others. There are glossy, full-color pictures of each dish and good instructions on how to prepare them. Very few recipes that involve a jelly-roll pan or anything you couldn't whip up for dinner in about an hour or less. I have all sorts of cookbooks I love to read and drool over, but this one actually gets used. A great value even if your local Dollar Store doesn't carry it!
