the soup is on

I'm old enough now to look back and try to appreciate some of the things that worked out right. I tend to remember trying to cook something for large groups because Americans have been great about interacting on foods that are different from the usual expectations. The timing in the cookbook Meals That Can Wait is perfect for people who have time to cook but never know when they are going to eat. Soup gets better as it gets older. I'm trying to get the most use I can from a bone-in leg of lamb that I purchased at a farmers market. On Memorial Day I was fortunate to visit a house where the cookbook I used to make Paloc Leves (p. 140) for a church soup supper still sits in a bookshelf of cookbooks near the kitchen. I looked for the recipe and tried to remember the ingredients: lamb, paprika, onion, green beans, and potatoes. When it is time to eat, sour cream gets mixed in to make it rich. Instead of using two pounds of lamb shoulder and browning cubes of meat, I'm trying to start with a bone that has previously been roasted. Fortunately I won't have to go to a store and get sour cream until I'm ready to eat, which might still be a few hours away. Eating is one of my favorite things to plan as part of each day, and trying new meals is my main reason for looking in cookbooks. I have made many soups and stews in my life, but the lamb-green bean-paprika-sour cream combination was worth remembering, and trying to figure out a title in Hungarian made finding it in the cookbook challenging, but with a list of soups in the index, it was not impossible.
