This is a great overview of the state of zoos and their role in conservation (albeit a couple of decades out of date, since it was published in the 70s). The book discusses the role of zoos as 'lifeboats' for endangered species -- Ararat is where Noah's Ark landed in the Bible, if you don't know -- taking the Arabian oryx as a case study. The book tells the story of how it was hunted nearly to extinction, bred in zoos, and is now making a comeback in the wild. It also covers the design and management of modern zoos, educational programs, and a bunch of other things that I don't remember at the moment...but anyway, it's one of those neat 'science for the layman' manuscripts. If you like Gerald Durrell or David Taylor's memoirs, read this.
