This study contributes to the valorization of Morinda citrifolia (RUBIACEAE). The leaves of Morinda citrifolia were characterized by phytochemical screening, thin layer chromatography, flavonoid quantification, antioxidant activity evaluation and toxicity test. During this work, an analysis of the biochemical composition of the leaves was carried out and their global energetic value was determined. The results obtained showed that the leaves of Morinda citrifolia have a fairly high quantity of protein (18.52%) of good quality and that they have a fairly high antioxidant activity (1.7 mg/ml). Thus, a protein-based food supplement with antioxidant activity in infusible form was made.
