Chef Rafael ran a seafood restaurant in Pucusana, Peru. In order to source ingredients for his restaurant, he also relied on a network of suppliers, made up of fishermen, local farmers, artisans, and producers, that spread over the rich geography of Peru, including portions of the Andes mountains and the Amazon rainforest... One day Chef Rafael learned how a transparent food supply chain would provide benefits such as food safety, fresh food, less food waste and food fraud, and he envisioned building such a network for his restaurant...
