In 1991, Bill was battling a severe intestinal disease and his wife Joyce was suffering from a life- threatening neuro-muscular condition. Through prayer and an adjustment in their diet, their conditions improved dramatically. Over the years, Joyce converted all of their favorite recipes to a "healthy" version. Most of these recipes are without the use of sweeteners, dairy products, hydrogenated fats/oils, fermented liquids, refined products, with the option to be gluten free. My favorites are lasagna and sweet and sour chicken...my children like the pan/oven fried chicken and macaroni and cheese. Don't knock the sweet potato ice cream until you've tried it. It is a staple in our house, and our friends really enjoy it. The conversions are intuitive, so you can take the pattern in this book and convert some of your own favorite recipes. If you are looking for a book that has exotic healthy recipes, then don't buy this book. However, if you are looking for healthy versions of classic recipes, then this book will be the cookbook for you.
