Lots of information beyond the recipes including cooking styles, water ratios, gluten, types of grains, and good news about whole grains. The recipes range from simple to complex, but the instructions are thorough and there are notes to make the recipe easier or fancier. I cannot wait to try Cornmeal and oat waffles; Wheat berries with feta and olives; Red rice and lentils; Baked barley, beans, and bacon; Wheat berry and black eyed peas hummus; and some of the grain burgers. In fact, I am trying millet this morning in my steamer, in part based on their cooking directions. Really nicely put together cookbook - the only thing better would be a picture of every recipe.
