Rave for style, substance, and clarity of presentation

Emalee Chapman's Fast Italian Meals sits next to my out-of-print copy of James Beard's basic cookbook as my most heavily used and best-beloved cookbook. I learned to cook authentic Italian food following her brief, insightful instructions. Many of the meals are designed for two people, and none of the recipes calls for more than a few ingredients. The majority of the recipes are light in calories and fat, and supremely flavorful. Chapman's recipe for tuna-tomato sauce is an 8-minute dream meal. Great pastas, salads, and light meat dishes. Wish this would come back into print so I could buy copies for all my sisters.
