Rosenberg & Kemp have produced a (large) book that is very readable that explains clearly just what goes on between your phone and all the rest of a celluar system when you make or receive a call. They include the behaviors of standard dial landlines as well, showing where existing practices have shaped the newer technology. As a pre-publishing reviewer of one chapter in this book, I can't claim to be 100% objective ... only 99%.
