Crazy delicious, easy on your waistline, feel-good food, with simple to follow recipes that are amazing! I have had nothing but great meals from this cookbook. There isn't one recipe that I have made so far that has been less than stellar. A couple recipe recommenddations I have are: Veggie Potpie Stew served with Caulipots, Pad Thai Salad, and Brussels Sprout-Potato Hash (weird combo, but delicious!). I love that these are all low-fat dishes that actually fill me up. I would say that the majority, if not all, of the recipes are easy and quick to make.
