Alaskan Gourmet Dining - Delicious and Easy-to-Follow Recipes

I have had the pleasure of visiting Camp Denali and eating in their kitchens. Their food is sublime - - at breakfast, lunch and dinner. Despite the remoteness of the lodge and the adversity of the climate, they grow many of their own salad greens and vegetables and use mostly organic ingredients that are shipped in. The meals there rival any five-star restaurant that I've eaten in. The book contains many of the same dishes that I had while on my vacation and many others that I am eager to try. A sample of some of the recipes include: sourdough pancakes with directions for a sourdough starter frittatas multiple types of muffins, primarily using Alaskan fruits such as blueberries, cranberries and lingonberries Mouth-watering scones of all types White Bean Pesto Spread Many kinds of homemade breads hummus granola gorp vegetable sushi spanakopita Carrot Ginger Bisque Creme Fraiche Curried Squash and Pear Bisque Provencal White Bean Soup Warm Potato Leek Salad with Pistou Tabbouleh Apricot-Glazed Pork Tenderloin with Apricot Peach Chutney Salmon with Black Bean Sauce Goat Cheese Souffle with Thyme Spring Vegetable Pot Pies I could go on and on. The food is presented in a beautiful way that makes it as lovely to look at as it is delicious to eat. I can't give enough praise to the quality of the meals at this lodge. The recipes in the cookbook are clearly written and the illustrations are delightful. Anyone interested in an Alaskan-based cookbook with a gourmet bent is sure to be pleased with 'A Cache of Recipes'. I believe that the author of the book, Laura Cole, along with her husband, have opened a recipe on the Parks Highway at mile 229. The restaurant is called 229 and I hear wonderful things about it. I do not know the authors as one might think because of my glowing review. I have just recently returned from a wonderful stay at Camp Denali where the ambiance and food helped make for one of the best vacations of my life.

I am not a cook and can't really tell you how good/bad this cookbook is. What I can tell you is that I stayed at Camp Denali and the food was great (although not enough chocolate based desserts IMHO and since it is the northwest, maybe a bit more fresh salmon would've been nice). In skimming through this book, I did recall some of the food that I ate while there. If the book is representative of the food served at Camp Denali then you will probably be happy with the outcome of the recipes. Enjoy!
